My first post! I’m very excited to get this blog rolling. I’ve been researching and re-pinning new recipes like a mad woman so that I’ll have plenty to post. But before I dive into a whole new world of culinary adventure I thought it would be prudent to post one of my current favorite treats. I can’t get enough of these Nut Butter Oat Bites! These are perfect to snack on pre-gym or even mid-day for a boost of energy. I like to stash a few in my bag for when I’m stuck in my 3-hour long night classes! This version of the recipe yields approximately 16 balls but when I have no one to share these with I’ll modify the recipe to make a smaller batch.
There are sooo many variations of these floating around online. I’m planning on experimenting with a few different ones I’ve found and some I’ve thought up on my own. Enjoy!
Tip: If the mixture is too dry (mine was a liiiiiiiittle bit on the dry side) add a little more honey, or a small splash of almond milk.
Nut Butter Oat Bites
Makes 16 Balls
1 cup rolled oats
2/3 cup shredded coconut
1/3 cup all natural peanut butter (Or any nut butter you prefer. I love this recipe with almond butter.)
1/3 cup honey
1 tbsp chia seeds
1 tbsp vanilla extract
1. Mix together all ingredients in a large bowl until thoroughly combined. You might have to use your hands for this part!
2. Roll the mixture into 1 inch balls and place on parchment paper
3. Transfer rounds to refrigerator for a few minutes until firm
4. Store in an airtight container for up to one week.
